Healthy Tasty Turkey Burgers – perfect for your Memorial Day BBQ

Memorial Day is quickly approaching! The official start to summer and barbeque season! Too hot to cook? Hosting a party or attending a pot luck barbeque? Want to serve something tasty and healthy? These turkey burgers will surely be a hit with your guests and they are great to freeze for those days you just don’t feel like cooking! Quick, easy, yummy and good for you!

Summer is a time for food, friends and relaxation. There is no reason you can’t be health conscious and enjoy at the same time! Healthy food is not only good for you – but with a little imagination it can taste great too!
Turkey burgers are a popular alternative to beef burgers, they are low in fat, grill well, but can tend to be bland. This recipe below is juicy, tasty and is fantastic with a slice of cheddar cheese! The burgers go great on top of salads or on a whole grain bun (be sure to load up the veggies too!).
Becky’s Healthy Tasty Turkey Burgers:
1 1/4 pounds extra lean ground turkey
1 cup salsa
1/2 cup chopped shallots
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon chipotle-flavored hot sauce
2 tablespoons ground cumin
Dash of salt and ground black pepper
Fresh slices of cheddar cheese (optional)
Mix ground turkey, 3/4 cup salsa, shallots, cilantro, 2 tablespoons oil, hot sauce, cumin, salt, and pepper in large bowl. Shape turkey mixture into four – six 3 1/2- to 4-inch-diameter patties.
Place burgers in grill pan on barbeque over medium flame and cook for approximately 3-5 minutes per side – depending on the size of your burger. A grill pan is necessary as the burger may be too soft to place directly on the grill. Or in the alternative, you can heat a large nonstick skillet over medium-high heat and coat pan with non stick cooking spray. Add burgers; cook until brown, about 3 minutes per side. Reduce heat to low. Sauté until burgers are cooked through, about 4-6 minutes, turning occasionally (Time frame depends on the size of your burgers).
Serve burgers over large tossed salad or on a whole grain bun topped with remaining salsa! Enjoy!!! Feel free to leave your comments!

The Best Foods for Health, Wellness and Weight Loss

In our society where obesity has become a crisis, and the lifespan of our children for the first time in history is lower than their elders, the most difficult question we all face – is what foods are good to eat for health, wellness and weight loss? There are countless food products, diet pills and companies promising the secret to health and weight loss. But the truth is many of those companies are profit driven, with no concern for the consumer’s health or well being.
There is a saying…..
If you could have hunted for it, fished for it, plucked it or gathered it, it belongs on your table.
Fresh fruits, fresh veggies, lean proteins, nuts seeds….these are all great healthy foods- made by the Earth itself- and here for your daily consumption! It is only since the industrial revolution that the processing and mass production of food has developed. The obesity crisis correlates to the start of this practice. The best way to know if your food is processed, is to read the ingredients of a food; if you don’t understand them- don’t eat it! Why would you eat something when you don’t know what it is? Because it is in a nice package all pretty ready to purchase at the store? Cigarettes are also in nice little packages, ready for you to purchase at the store- AVAILABILITY does not mean it is good for you!!! Trust yourself- and your instincts when making food selections and be creative have fun! If you don’t enjoy what you are eating and what you are doing- your success will be short lived.
Creativity is crucial – as it will lead to diversity in your food selection, prevent boredom and increase your overall enthusiasm about your new dietary changes! Here is one of my favorite creative ways to eat fresh raw cabbage! It is actually surprisingly tasty and extraordinarily healthy! Don’t be afraid! Try it! You may be surprised!

Fruity Yummy Cole Slaw Salad

1/2 bag Dole traditional Cole Slaw salad mix
1 Low Fat Stony Field Farms Vanilla Yogurt
1/2 Apple cored and chopped into small bite size pieces
1/2 Cup Raw Nut/Raisin mix – unsalted
2 TBS Ground Cinnamon
Mix all ingredients in a bowl and YUMMY! You are eating cabbage!!! Make two of these salads in a week and do you know how much cabbage you have consumed???

Becky’s Chocolate Protein Shake that is SUPER YUMMY!

Hey everyone!

So many of you know- my protein shake of choice is Isopure in the Bottle….it is zero carb, 40 grams of protein, 160 calories….and you can gulp it down with no tummy remorse (no gas bloating etc.). It is the perfect meal on the run. Last week I went to visit my grandma in Florida and was unable to travel with glass bottles filled with liquid…..(scary world we live in); so I had 2 chocolate protein powder packs from GNC – that needed to be used or thrown out – so I tossed them in my bag thinking I would like to try something new with them in my free time while granny sitting…..

When I got to Florida I whipped together this following Chocolate smoothie – and it was AMAZING! In fact, I will make one for a snack later today!

CHOCOLATE MILKSHAKE:
1 Scoop Chocolate Protein Powder
1 Cup Unsweetened Vanilla or Chocolate Almond Milk
1 Frozen Banana
2-3 Ice cubes
1 shot of expresso or chilled strong coffee (optional)

Blend until smooth!

Tried and True? Or False? Coconut Cream Cups

From March 2010 Clean Eating

Hey Everyone!!!

So here it is- the bi monthly – Tried and True or False – recipe tester post…….last time – I tested the Almond Milk Rice Pudding – from the January Issue of Clean Eating – and it was AWESOME! I made some minor tweaks to the recipe- posted it and STRONGLY encourage you to try it! I made it for a dinner party – and my guests loved it! This time around – I tested the Coconut Cream Cups from the March 2010 issue of Clean Eating….I have been trying to ADD some new good foods into my daily diet – and with enthusiasum – I purchased my FIRST pound of TOFU ever for this recipe! I thought if it came out good- it would encourage me to try and cook more tofu at home (even though I try to avoid SOY products – it is a good meat alternative…..) So then I got to work!
And here is my review…..

MY DOGS WOULDN”T EVEN EAT IT. GROSS. The recipe was not complicated, looked exactly like it did in the picture……but the tofu based custard just did NOT work. It had an after taste and psychological effect – that just could not be overcome – even with extra coconut!!! So save your money, and your time and pick another recipe to try this week!

Almond Milk Rice Pudding – TRIED AND TRUE OR FALSE??

So here it is! just like I promised – the NEW segment of my Blog –

Tried and True? or False!

We have all been there – reading a popular fitness magazine – glancing over the beautifully photographed recipes that look sooo yummy! Then we get inspired, go out, purchase all of the ingredients and decide today is the day I will start to eat healthy, and it will begin with this fantastic recipe I took out of _____ magazine. Then you spend the time, cook it, and it comes out looking absolutely NOTHING like the picture and tasting far worse then anyone could imagine, and with no other option because at this point you are starving, Chinese take out is on the menu for dinner! I want to help END the discouragment, the wasting of time and money – and put the trust BACK into the readers and testers of these recipes! So each week (or maybe every other week ;o)) I will try a NEW recipe from a national fitness / healthy eating magazine. I will then offer my HONEST opinion as to whether it was easy and quick to prepare, whether it looked anything like the picture in the magazine and most importantly – a taste rating!
The recipes that will receive the highest ratings will be fast, easy, fresh and TASTY! I will even take picture of the food I prepare! Now – the whole picture thing – that idea just came to me – and since I tested my first recipe – and ate it all – a picture of this first review is impossible….LOL – so the pictures will be in the next post for sure!

This week – I tested
Almond Milk Rice Pudding in Clean Eating Magazine (p37 January February issue 2010)

- 4 Cups original unsweetened almond milk
- 2 Cups cooked brown jasmine rice
- 3 4 inch peices orange peel, no white pith
- 1tsp pure vanilla extract
- pinch sea salt
- 2 tbsp pure maple syrup, divided
- 3 tbsp unsalted almonds, sliced and toasted, divided
- 6 unsweetened dried apricots, thinly sliced, divided

In saucepan set over medium heat, add milk, rice, orange peel, vanilla, salt and stir to combine. Cook, stirring occasionally for about 30 – 45 min. The pudding will need more stirring as it thickens into custard. Remove rice misture from heat, let cool, divide among 6 bowls and drizzle each with 1tsp maple syrup and garnish with almonds and apricots.

REVIEW: This recipe makes this yummy dessert a little more complicated then need be. Generally speaking – it was AWESOME! Yummy, VEGAN, healthy, ……..just a few tweaks make it a little easier…..I made the recipe a second time – with the following tweaks and it was much easier, quicker and just as yummy! I skipped the orange peel, salt, vanilla extract, toasting the almonds (what who does that???), and thinnly slicing the apricots – let’s face it – I will never do that…..and it would inhibit me making the dish on a week night….Here is my modified, QUICKER version of this great recipe!

- 4 cups unsweetened Vanilla Almond Milk
- 2 cups cooked brown jasmine rice
- 1 tbsp ground cinn.
- 1/4 cup raw nut and dried fruit mix
- Maple syrup

Followed the recipe – but used Vanilla Almond milk – used the fruit and nut mix and sprinkled it evenly amongst all 6 dishes of the rice pudding after – I skimped out on toasting the nuts and slicing the apricots. Then I put a dash of maple syrup over each dish of pudding – I am not sitting there with all of my measuring spoons for a DASH of syrup – and to ensure each person gets exactly the right amount of fruit/ nut misture – divide evenly among the dishes using your vision and knowledge of how to share! :O)

You made the resolution to get healthy and fit – where do you begin?

aboutbeckyThe New Year is in full swing now! The first full school and work week of 2010! You made the New Year’s Resolution to get healthy and fit – NOW – where do you begin? This seems to be one of the biggest challenges people face when trying to make a drastic life change! And – trying to eat healthy and exercise after not doing so for a long time is a challenge! I KNOW – I have been there! Here is a great way to get started!

First- start SMALL…..I want you to exercise 1 time this week! Just ONCE! And make ONE dietary change! FOr your first workout of the year – hit the gym and do one hour of cardio…..low to med intensity. This will get you out, moving, and not overwhelm you or make you too sore. As far as the diet change goes, the easiest one to make is to eat and select a healthy breakfast everyday! That is it! Just eat a small protein packed, fiber rich breakfast, and exercise 1 time. This is not hard. Do this for 2 weeks in a row – and then you are well on your way to a new you for 2010!

WHY WAIT UNTIL NEW YEAR’S TO GET FIT?

Too many people use the excuse of New Year’s Resolutions to start exercising and eating healthy in the New Year (future) to justify going off the deep end and eating whatever it is they want during the holidays. This often leads to unhealthy weight gain that remains with us and tends to add up after New Year’s Resolution are forgotten by Jan 7! (hee hee) Isn’t that the cycle? Eventually, you will lose a few of the holiday pounds, but a few will stay too – which then leads to 3-5 pounds weight gain per year……hmmmmm

So! What I generally suggest is to resolve to start your New Year’s resolution EARLY – hit the gym hard, watch the food you eat closely, so when you do indulge at holiday parties – like we all do – the damage won’t be as bad.

Here are some tips to help you through this challenging festive time of year!

Most important – Do not resolve to gain weight this holiday season!
o Do not allow yourself to overindulge regularly with the thought that you will enter onto a health and wellness plan come January 1 – when it is all over!!! Food, alcohol, sugar, it is all addicting!! To eat without limit, you will set yourself up for weight gain, lethargy, low self esteem and worse depression after the New Year. Try getting up and adding a hour of exercise to your daily activities while feeling like that!!! Yeah right! So start now and avoid those feelings……

Be realistic!!!
o Eat sensible and understand while you may have a tendency to eat more sweets and treats than usual during the holiday season, use some discretion and self control. Really – you will thank yourself the next morning and January 2!

Don’t go Hungry! Eat a sensible meal before your party or gathering. I typically choose a nice big bowl of fresh steamed veggies or a large apple and a big bottle of water.
o Try to arrive at parties with a full stomach; while this typically goes against the popular trend of starving yourself before a party – keep in mind that starvation leads to insanity and an insatiable hunger. Insatiable hunger – drives willpower and common sense right out the door; this is how most people gain weight! If you are full, you will have the mental strength to make better food choices and will have a tendency to eat less, rather than overindulging. If you have a full stomach your judgment will be more clear and your ability to exercise willpower is maximized. Then, you can then properly select and limit the treats you do decide to have.

Bring a healthy dish to share; this is one of my favorite tips to avoiding holiday and party weight gain!
o A hostess is always grateful for thoughtful additions to a menu! My favorite healthy dish I bring to parties is Mom’s fresh Ricotta with fresh fruits. The recipe is in this Blog! It ensures I have a good, high protein, low fat, clean dessert – which tends to be my downfall at gatherings.

Mom’s Magical Fruit and Cheese
1 Quart Lowfat Ricotta Cheese
3 Tablespoons honey
1 teaspoon vanilla

Put all ingredients in a bowl and using an electric mixer, mix the ingredients for about 10 minutes until fluffy creamy texture.

Serve about 1/2 cup with chopped fruit of your choice. Berries, and cantaloupe are what we had this weekend! Enjoy!!!

Try not to drink your calories and limit your alcohol intake.
o As you all know – weight gain boils down to this simple equation – CALORIES IN – CALORIES OUT. With that in mind – why would you waste calories on a drink?

o Yes – wine has calories, but not too many – here is the issue I have with too much wine…..it takes your judgment away! 2 glasses of wine – will cloud your judgment in making other proper food choices. So if you have an alcoholic drink, please be sure it is lower in calories, and please be sure to limit your consumption of the alcohol so as not to lose your judgment when making food choices.

o Your best bet is to avoid alcohol and calorie laden drinks (like eggnog) altogether, and stick with sparkling water. Want to snaz it up? Try sparkling water with a splash of cranberry juice and lemon or lime. Looks like a sexy cocktail and tastes great too!

Go for the fresh fruits and veggies.
o These are always the best choice when it comes to calories, fat and nutrients. When filling up your plate, the more fresh fruit and veggies you eat, the less room you will have to eat calorie / fat laden foods. I hate to label any food as bad – and I hate the act of avoiding certain foods altogether, so I always advise my clients – go for the foods containing the nutrients your body NEEDS and the other foods later…..

Make exercise a priority, and do it first thing in the morning!
o I know time is tight! BUT schedule your exercise in each day! Studies show that people who exercise first thing in the morning have a much better success rate at sticking with fitness programs than those who workout in the afternoon or after work. You may actually enter the New Year ahead of the game – already with weight loss and fitness gains!

Wear form fitting clothes!
o This will ensure you keep yourself in check. When you pants get tight, and you become uncomfortable, let that be a warning, you have had enough to eat. Form fitting clothes are great silent reminders health conscious goals and a great way to ensure your holiday weight gain is minimized!

Enjoy the holidays – and the treats, parties, friends and family!
o Don’t sweat the small stuff! Ok- maybe you went over board at a gathering….no big deal. Move on, workout and forge ahead! I always say- treat yourself like you would your best friend! Be forgiving and encouraging! This is a time to be happy and to celebrate the gifts of life and to share with others less fortunate. Keep the true meaning behind the holidays ……

There you have it! My tips to avoid weight gain during the holidays and always!

Now – what about the 2010 Resolutions???? NEW YEAR NEW YOU! Why not make 2010 the year that you transform your body? Your Life? It is possible – you simply have to make the decision – make a commitment and go for it!

Haunted Houses and the Celebration of Haloween!

Hey everyone!!!

I want to let you all in on a little secret…..I am still 13 trapped in a 33 year old body…..LOL So – naturally- Halloween happens to be one of my favorite times of the year! Costumes, gatherings, fall weather, scary movies and HAUNTED HOUSES!!! Together with my good friend Melissa, we have compiled a list of local Haunted Hayrides, corn mazes, and Haunted Houses for your enjoyment!!!

Blood Manor – NYC -www.Bloodmanor.com – I went last year…..it was fun…..we went out for a nice dinner with friends, then walked through the city to get there…..it was a bout a 20-30 minute wait to get inside, but there were all sorts of creepy monsters to keep you entertained. It was fun- but not so scary…..

Paddleboarding, Sailing around NYC and Fritattas!

Happy Monday!!

So this past weekend- I went out – and really explored some fun activities around the NY area – many of which are available worldwide! I wanted to tell you all about my experiences and hope you find the time and energy to go and enjoy the splendors of life!!! These activities are great for all ages- and can be enjoyed as a trip with friends or the whole family!

Ok- so first – on Saturday – I took a paddleboarding lesson! It was AWESOME! We paddled for about 2.5 hours in a pond/lake in the Hamptons LI – what an amazing expereince! You get to stand on a large surfboard and paddle around….when we got tired, we layed on the boards and took in the rays…..we also paddled on our knees for a while…..really so much more fun then Kayaking – as you are much closer to the water. We took the lessons and then rented the boards for an additional 2 hours from Surf Hampton 631 283 8243.

SAILING NYC:

Then on Sunday night- I went sailing around NYC for 2 hours on a classic sailboat – about 20-30 people on board. Champane was included as we watched the sun set behond the Statue of Liberty. The sail was $50 and left from Chelsea Piers. Another awesome way to experience NYC…..meet new friends, relax and take a staycation…..

FINALLY -

Kandi’s Frittata!!!
A few weeks ago I was visiting my good friend and she invited me for breakfast……she happens to be my idol with respect to being an awesome MOM and housewife (as well as many other things….). This is a version of what she made! It was awesome!!! I HAD to share it with you!!!

In glass corningware dish- I use a medium rectangle dish – coat pan with olive oil cooking spray. Then cover the bottom of the pan with a think layer of shredded potatoes or sweet potatoes (for speed I use Simply Potatoes), then add a layer of any ingredients you wish……(last week I did sauteed basil, onions, tomatoes, sun dried tomatoes, parmesean cheese, and brocoli) [today I will add sauteed portobella mushrooms, onions, spinach and asparagus with parmesean cheese] then top with 18-24 egg whites and shredded cheese. Then bake on 350 for about 30 minutes until set and slightly browning on top. Enjoy!!!

One ingredient ice cream? What?

Could it be true? Someone forwarded me an email making this claim….it was a reputable source too- so I was forced to inquire……and read on. What I found was amazing! YES it is TRUE! One ingredient ice cream- with NO artificial flavors, additives, dairy etc! MADE OUT OF FROZEN BANANAS! I read it – comprehended it- but still did NOT believe it…..how could this be? Soft serve frozen ice cream?

OK – so I had to see for myself and try it out. I froze 3 well ripen bananas and chopped them into 5 pieces each; then I put them in a blender 2 at a time – letting them get chopped to 1000 tidbits. Then I took a spoon and pushed all the chopped banana down- and started the blender again…..this time ensuring the banana keeps getting pushed down……unbelievable – 2 minutes and I had soft creamy fantastic ice cream!!!

Amazing! Try it for yourself!! and ENJOY!!!
